Plain does not return it to it's base color, for some pieces it will get close. Plain dye is plain, not default. For reference, plain dye looks like the bone armor that the Khaldun Zealots wear.

You can do the bleach quest in Britain. That will set it to default.

Also scouring toxins work as a bleach too. For leather though? Plain dye.
