I looked at the SWG one briefly, but I think it's set up in the same way that most of the WoW ones are done. My comments are more based on the ones I have seen and been involved in, though.
I think a Wiki would be pretty awesome to have. I think having some history and character bios, guild things, and the such would be cool. I understand where Kuja was coming from with people not doing their own, but that's actually completely opposite of what I have seen done before.
The way I, personally, have seen them set up was that everyone could do their own pages how they saw fit. There was a basic format for it that was easy to fill out, but besides that it was pretty lenient. You'd basically do your own character(s) page(s), fill out basic stats, personality, some background, looks, and other details like that. I've never really seen it end up being a problem, for the most part, because a lot of the stuff that you write is usually just the things that are relatively obvious about your character(plus the background which has already happened usually before you even start RPing, or is happening/happened since RPing).
I would see the base part of a Wiki as the same kind of idea that is happening with the Gallery of Origins. Just in a more easily accessible format and with more details about your character besides just background.
Adding stories, a timeline, and history like that are nice, too. Personally I'd see that as more of a side thing, though. As much as it would be interesting to read about -some- things that have happened or some stories, the shear amount of it would be overwhelming and most people wouldn't even begin to read most of it.
That's all just my two cents. Character descriptions seem to be the thing most people will want to look at, I'd imagine.
